WHAT'S THE BEST THING TO COOK IN A SLOW COOKER

When it comes to choosing a cut of meat to put in your Crock Pot, you really can't go wrong. I've never come across a piece of meat that didn't turn out perfectly in the slow cooker.

SUNDAY CROCKPOT DINNER

Whether you need crockpot recipes for two or you need to feed your hungry family for Sunday Dinner, you're in luck! Slow cookers allow you to easily adjust the size of meat you want to cook.

If you make too much food, you could use the leftovers to make sandwiches, burritos, or an easy tortilla wrap the next day.

Want to make a second dinner out of leftovers? Try white rice or mashed potatoes. They go perfectly with most of these recipes.

Prep Time 15 minutes mins

Cook Time 5 hours hrs

Total Time 5 hours hrs 15 minutes mins

Ingredients

  • 2 to 3 lb beef stew
  • salt and pepper to taste
  • 5 to 6 medium potatoes (peeled and chopped into even chunks)
  • 4 carrots (peeled and chopped into even chunks)
  • 1 package dry onion soup mix
  • 1 tbsp garlic (minced)
  • 32 oz box beef broth
  • 6 oz can tomato paste
  • 1 tbsp worcestershine sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 bay leaves
  • ¼ cup flour

DIRECTIONS

  • Add all the ingredients, except the flour, to the Crockpot.

  • Cook on high for 5 to 6 hours.

Tip: To cook the stew overnight or while you’re at work, use the low setting for 8 to 10 hours.

  • In the last half hour, take out a half cup of broth and mix it with the flour to make a roux.

  • Pour the roux back into the stew and cook for another 30 minutes.

Tip: If the stew is still too watery, add more flour, a little at a time to thicken.

  • Remove the bay leaves.

  • Serve with crusty bread, dumplings, or your choice of vegetables.

Tip: If you’re not ready to eat, you can leave the Crockpot on warm for a further hour or so if needed.

Notes

If you would like the beef stew to be thicker, then add more flour before returning mixture to the pot. Additionally, you could add cornstarch instead of more flour which would also help to thicken the stew.

Herbs will lose their flavor as they simmer, so add dried herbs at the start of the cooking and sprinkle in fresh herbs at the end for an extra boost of flavor. Thyme is the only herb that will not lose its flavor after simmering.

If the meat is cut into too small of chunks, it will fall apart before serving. Make sure the pieces are big enough that they will not fall apart when cooking.

To cook the stew while you are at work or overnight, set it to the low setting and cook for 8 to 10 hours.

Ingredients

  • 6 tablespoons unsalted butter (divided)
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 3 pounds beef chuck roast (boneless)
  • 1 tablespoon onion flakes (minced)
  • 1 packet Ranch seasoning mix
  • 1 packet Au Jus seasoning
  • 10 whole pepperoncini

DIRECTIONS

  • Heat 1 to 2 tablespoons of butter in a skillet over medium-high heat.

  • Lightly salt and pepper each side of the pot roast (see note about salt). Add the meat to the skillet and sear each side of the roast until browned.

  • Transfer the browned roast to the crockpot and pour all the excess butter and browned bits from the skillet into the crockpot.

  • Sprinkle minced onions over the meat.

  • Add contents of ranch seasoning and au jus packets.

  • Top with remaining butter, cut into pieces. Add pepperoncini to the pot and place the lid on top.

  • Cook on low heat for 8 hours or until meat falls apart easily when pulled with a fork.

  • Shred the meat into large chunks and stir everything together.

  • Shred the meat into large chunks and stir everything together.

Notes

  • Ifyour beef is frozen, make sure to thaw the frozen roast first or it won’t cook correctly in the slow cooker.
  • Be aware of the salt content you’re adding to the slow cooker. If you want to use salted butter, don’t add salt to the meat before browning it. Choose low sodium options for the ranch seasoning and/or au jus packets if available to have more control over the salt level in the finished dish.
  • You can skip the step of browning the pot roast before adding it to the slow cooker. The browning step adds additional flavor and also helps lock in the juices.
  • This is cooked slowly and on low heat for a nice tender pot roast. Cooking it on the high setting will take less time, but the pot roast will not be as tender.

Is it safe to put raw ground beef in slow cooker? ›

Yes, you most certainly can cook raw meat in the slow cooker! You put it in “cold”, with whatever liquid your recipe calls for, turn it on either “low” or “high” depending on your recipe (I usually start it on “high” for a couple hours, then turn it to “low”), and in 6–7–8 hours, it's now COOKED meat!

What is the best meat to cook in a crockpot? ›

Choose the right cut: Chuck roasts, short ribs, pork shoulders and lamb shanks (think fatty and tougher meats) become meltingly tender with the moist, low heat of a slow cooker. Leaner cuts like pork tenderloin tend to dry out. Likewise, dark meat chicken — thighs, drumsticks, etc.

Do I have to brown beef before putting in slow cooker? ›

Browning Is Better

And if you dredge the meat in flour before you brown it, your sauce will thicken up to make a gravy. You should always brown ground beef or any ground meat in a skillet before adding it to your slow cooker to prevent the meat from clumping up or from adding excess grease to your cooked dish.

Why does my beef go tough in slow cooker? ›

Meat that is over-cooked, even if it's submerged in liquid, will eventually dry-out, and get tough, and different cuts of meat cook differently. There are a few reasons for that. Not having enough liquid in the pot can do it. A poor cut of meat can result in toughness as well.

Why is my slow cooked beef so tough? ›

Add Just Enough Liquid

If you want the dish to be saucy, or you're making a beef stew, add enough liquid to come about 1/3 of the way up on the meats in the slow cooker. This allows your meat to braise, not boil. Boiling creates tough meat!

What is the most tender beef for the crockpot? ›

Chuck roast is one of the more popular slow-cooker options because of how tender and flavorful it becomes after several hours of cooking on low.

Can you leave beef in slow cooker all night? ›

Don't leave it on 'warm' all day

The general rule of thumb is that 2-4 hours is the maximum length of time you can leave food in a slow cooker on warm. After this, it needs to be cooled and transferred into the refrigerator.

Why is my ground beef still pink in the crockpot? ›

Ground beef can be pink inside after it is safely cooked. The pink color can be due to a reaction between the oven heat and myoglobin, which causes a red or pink color. It can also occur when vegetables containing nitrites are cooked along with the meat.

Can I overcook beef in a slow cooker? ›

Can you overcook something in a slow cooker? Slow cookers are specially designed to cook food for long periods of time, but yes, you can still overcook in a slow cooker if something is left on the wrong setting for longer than it's supposed to be.

What is the difference between a slow cooker and a crockpot? ›

They are essentially two terms for the same thing. Crock Pot is just a trademarked name for a certain brand of slow cooker that uses a crockery insert as a cooking vessel. Agree with most of the answers. “Crock Pot” is a brand name, and the brand name of the first popular slow cooker.

Do potatoes go on top or bottom of meat in crockpot? ›

Slow cooker recipes have (obviously) long cook times, and it's the meat—not the carrots—that benefit from it. By placing the protein at the bottom (closest to the heating element), and vegetables at the top, you can keep your plant parts a little more toothsome, while ensuring your meat is fall-apart tender.

Do potatoes go on top or bottom of roast? ›

I also try to make sure the potatoes are on the sides around the roast and top the roast with the carrots and onions. Pour the beef broth/seasoning mixture over the roast and veggies in the crockpot. Add the lid to the crockpot and cook on low for 8 hours or until the meat is fall apart tender!

What happens if you don't brown meat before slow cooker? ›

Searing meat before slow cooking adds flavor through caramelization, but it's not mandatory. If you skip searing, you might miss some depth of flavor, but the slow cooker will still cook the meat thoroughly.

Can you put beef in slow cooker without liquid? ›

The meat will make a little of its own juices, but cooking it without liquid may dry out your beef long before it's even fully-cooked, making for a not-so-appetizing dinner.

How long does raw beef take in slow cooker? ›

Heat on high for 4 hrs or low for 6 hrs until the beef is cooked and tender.

Can you put meat straight in slow cooker? ›

If you're throwing raw meat straight into your slow cooker, know that there are better ways. Kornblum tells SELF that while, yes, you technically can slow-cook with raw meat, you won't get your best results this way.
