- Divide the wings up. To disassemble a drumette, all you need is a sharp knife and some patience.
- If you don't plan on using them, the tips can be frozen and used to make stock later. Put everything in a big bowl, add the brining ingredients, toss it all around so everything is covered, and chill for an hour.
